Dairy-Free Feta Cheese Dip
Ingredients
- 8 oz plant-based feta cheese I used Violife
- 1/3 cup dairy-free Greek-style yogurt I used Kite Hill
- 1 cup organic pumpkin puree
- 2 tbsp honey or maple syrup you could add more if you like it sweeter
- 1 tsp fresh thyme leaves
- 1 tsp Salt and black pepper adjust according to taste
Instructions
- Take your plant-based feta out of the fridge 20 minutes before starting. Room temperature cheese blends better. Cold cheese creates lumps instead of silky smoothness.
- Add the feta and dairy-free yogurt to your food processor. Blend on high for 30 seconds. Scrape down the sides. Blend again until smooth and creamy.
- Add your pumpkin puree, honey, thyme, salt, and pepper. Pulse several times to combine. Blend for another 30 seconds. The color should be light orange. The texture should look like thick hummus.
- Taste and adjust accordingly. Plant-based feta saltiness varies by brand. Add more salt or honey based on your preference.
- Transfer the mixture to your serving bowl. Use the back of a spoon to create swirls on top. These ridges catch the honey and toppings nicely.
- Sprinkle chopped walnuts across the surface or add dried cranberries for color and tartness. Scatter fresh rosemary over everything and drizzle generously with honey. Add a pinch of flaky sea salt if you like.

COCONUT BUTTER HEALTH BENEFITS
Coconut butter is the ground up dried flesh of the coconut that contains both natural oils from the coconut oil as well as fiber from the flesh, bringing you the best of both worlds when it comes to total nourishment.

Oops I forgot that I didn’t add the macadamia nuts! That would raise the carb count!

It may also be the brand of xylitol is not subtracting the fibre, also could be the brand of coconut milk. When I did the recipe I got 229 cals for 16 servings with 6.5g NET Carbs. It all depends on the ingredients 😉

This turned out really good but I’m curious why the carb count is so high? I entered it all into MyFitnessPal app and the carb was 6.2 minus the 1.2 fiber.
