Best Vegan Cheese Recipe Ever - Cranberry Dill Goat Cheese

Ingredients
  

  • 1 cup raw cashews soaked overnight
  • 4 Tbsp coconut oil
  • ¼ cup cup fresh lemon juice
  • 1 Tbsp tahini
  • 2 Tbsp water
  • ½ tsp sea salt
  • ¼ cup dried cranberries chopped
  • 1/4 cup fresh dill chopped

Instructions
 

  • Place cashews in a large bowl and cover with 3 inches of filtered water to soak overnight in the refrigerator.
  • Drain the liquid, rinse under cold water and drain again.
  • Place cashews, tahini, coconut oil, lemon juice, sea salt and 2 Tbsp filtered water in a power blender and secure lid.
  • Blend from low to high until creamy, taking breaks to scrape the sides of the blender with a silicone spatula to ensure everything gets creamed.
  • Place a strainer over a bowl and line it with 3 layers of cheesecloth. Spoon the cashew mixture into the center of cheesecloth, fold sides of the cloth over the cheese and form into 6 inch spherical loaf. Twist the ends of the cloth and secure with rubber bands or twist ties. Set it in the strainer over a bowl and let it stand for 12 hours at room temperature.
  • After the 12 hours are up, discard the excess water and chill for at least 3 hours.
  • Chop the cranberries and dill.
  • Unwrap the cheese and place it into a bowl. Add the 2 Tbsp of dill into the bowl and mix to combine.
  • On a 12”X12” piece of parchment or wax paper, place the cheese horizontally in the center to form a log. Use the paper to roll the log neatly into about a 6-inch log.
  • Combine cranberry and remaining dill in a bowl. Sprinkle onto the cheese log, using the paper to roll the log, ensuring the cranberry and fill adhere to the cheese.
  • Chill the cheese log, or enjoy right away with a cracker!

    I’ve made this cheese several times and it’s always a hit with everyone and they can’t believe it’s vegan! The only thing I do differently, i don’t strain it at all and I find it to be the perfect consistency… one less step! Thanks for sharing 🙂

    1. Hi Josephine! I haven’t tried those subs before! This is a sweet flavor with the craberries so I’m not sure if the “cheezy” flavor of nutritional yeast would be strong or not. I imagine hummus would be milder and similar to tahini. Please let me know how it turns out! I made 4 hugs logs of this cheese at Thanksgiving for the vegans in my family (they DIED over how good it was) and also gave away as gifts. I hope you enjoy it! Happy Blending! ~ Tarashaun

  2. I’m just trying this! Looks amazing! But I made a mistake… I added the dill before it’s time… silly me… will that affect the cheese in a negative way? SOS

      Hi, Maria!
      When did you add the Dill? The Dill should be added at the end as a garnishment on top with the cranberries. Did you mix the dill in with the cheese? If so, you may miss out on the full effect of flavor. Try it out the way you made it and let me know how it was.

    Hi Yvonne,
    I have to agree with 110%!!!!! I haven’t had real dairy for many years now ( have several food sensitivities including dairy) and I can’t stop eating this “cheese”!!! I hadn’t realized how much I miss the taste. It has the right tang that complements the chopped raisins I used (didn’t have any cranberries) and dill. And bonus, it so easy to make : )
