1/2cupsevaporated milklow fat OR milk substitute of choice
1/2medium acorn squashcooked, peeled, seeded
1tspmaple syrup
pinchof nutmeg
1/4tspcinnamon
salt and pepper
Instructions
Roast squash in oven for 1 hour.
Place all ingredients into the blender in the order listed and secure lid.
For Vitamix: Select VARIABLE Speed 1. Turn machine on and slowly increase speed to VARIABLE Speed 10/HIGH OR use the Soup Setting. Blend for 6 1/2 minutes or until desired temperature.
For Blendtec: Press SOUP button 2-3x OR HIGH/90 second speed and blend for 5 minutes.
