Smoky Cauliflower and White Bean Dip

  • 3 heaping cups cauliflower chopped
  • Coconut oil for roasting
  • 1 1/2 to 2 teaspoon smoked paprika
  • One 15-ounce can white beans navy or cannellini
  • 2 tablespoons lemon juice
  • 1/4 teaspoon Celtic salt
  • 2 tablespoons water
  • 1 small clove garlic optional
  • 2 to 3 teaspoons avocado oil or grapeseed oil
  1. Place cauliflower on a foil lined baking sheet and preheat oven to 375°F (190°C). Give cauliflower a spray of coconut oil, and sprinkle evenly with 1 1/2 teaspoons of the smoked paprika.
  2. Roast cauliflower for about 30 minutes, or until golden.
  3. Transfer cauliflower to Vitamix or Blendtec. Add beans, lemon, garlic, salt, and water.
  4. For Blendtec: Press the DIPS/BATTERS/SALSA button OR use manual speed 6 for 30 seconds.
  5. For Vitamix: Select VARIABLE speed #1. Turn machine on and slowly increase speed to VARIABLE speed #10, then to HIGH. Blend for 30 seconds.
  6. Drizzle in your avocado oil and use PULSE button 6 times (For Vitamix models without a PULSE feature, turn to HIGH and turn on and off until combined 3-6 times)
  7. Serve with a sprinkling of paprika or chives and some of your favorite dippers: veggies, crackers, or bread!
