2-4tablespoonsnondairy milkmore with fresh peaches; frozen peaches are juicier
2-4tablespoonsvanilla vegan Yogurt
Instructions
Place peaches in two mugs and set aside for a few seconds to thaw peaches if they’re frozen.
Place the rest of the ingredients except the yogurt into the blender and secure lid.
For Blendtec: Use the Batters/Salsa setting OR use manual speed 7 for 20 seconds.
For Vitamix: Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to High. Blend for 20 seconds. Stop machine.
Place the oat mixture on top of the peaches and microwave on high 1-2 minutes (for one mug, 3-4 for both mugs), until the oat topping has cooked and looks a little like oatmeal.
Top with yogurt and serve!
