Easy Cranberry Relish Recipe

Ingredients
  

  • 2 cups whole raw cranberries washed
  • 1/2 cup onion
  • 3/4 cup sour cream OR vegan sour cream such as Tofutti
  • 1/2 cup unrefined sugar
  • 2 tablespoons horseradish* from a jar

Instructions
 

  • Place into a power blender in the order listed, secure lid.
  • For Blendtec and Vitamix: PULSE** several times being sure to keep chunky (do not puree).
  • The relish will be thick, creamy, and a shocking pink.
  • Put in a plastic container and freeze.
  • Early Thanksgiving morning, move it from freezer to refrigerator compartment to thaw.

Notes

* Horseradish: red is a bit milder than white
** If your Vitamix does not have a PULSE feature, turn the machine to high and turn on and off to equal 1 pulse.
