Gluten-Free Chocolate Chip Cookies

Ingredients
  • 1 3/4 cups Gluten-Free Baking Mix
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup chocolate chips
  • 1/2 cup butter softened
  • 1 egg large
  • 1/2 cup brown sugar packed
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat oven to 375°F (190°C).
  2. Add baking mix, baking soda, baking powder and salt to blender jar and secure lid.
  3. For Blendtec: Press "Pulse" 3–5 times to sift ingredients. Dump ingredients into mixing bowl. Add chocolate chips to mixing bowl.
  4. For Vitamix: Add same ingredients to mixing bowl and mix by hand.
  5. Add remaining ingredients to blender jar and secure lid.
  6. For Blendtec: Press the BATTERS Button
  7. For Vitamix: Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to High. Blend for 20 seconds or until well blended.
  8. Pour wet ingredients into mixing bowl. Use spatula to incorporate wet and dry ingredients.
  9. Drop by spoonful onto cookie sheet, and bake for 6–8 minutes.
