Creamy Beet Soup

Ingredients
  

  • 1 cup cashews raw
  • 2 cups beets fresh, chopped
  • 1 cup carrots fresh, chopped
  • 3 tablespoon lemon juice
  • 1 cup dill fresh
  • 1/2 cup onion chopped
  • 1 garlic clove peeled
  • 1 stalk celery halved
  • 1 teaspoon Himalayan salt
  • 1/2 cup water filtered

Instructions
 

  • Soak cashews in 2 cups filtered water for 3 hours and drain. Rinse.
  • Place all ingredients into the blender in the order listed and secure lid.
  • Blendtec: Press the WHOLE JUICE button.
  • Vitamix: VARIABLE, speed #1. Turn machine on and slowly increase speed to VARIABLE, speed #10, then to HIGH. Blend for 45 seconds or until desired consistency is reached.
  • Garnish with a sprig of dill and a slice of lemon.
