Kimberly Snyder's Oil Free Red Pepper and Cilantro Dressing

Ingredients
  

  • 1 tablespoon filtered water
  • 1 1/2 tablespoons lemon juice
  • 1 teaspoon apple cider vinegar
  • 1/2 red pepper seeded
  • 3/4 cup cilantro
  • 1 to mato small
  • 1 garlic clove
  • 1/2 teaspoon miso paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions
 

  • Place all ingredients into the blender in the order listed and secure lid.
  • For Blendtec: Using the TWISTER jar, press the DRESSINGS/BATTERS button. If using FOURSIDE jar, double the recipe.
  • For Vitamix: select VARIABLE, speed #1. Turn machine on and slowly increase speed to VARIABLE, speed #10, then to HIGH. Blend for 30 seconds, using the tamper to press the ingredients into the blades.
  • Pour over your favorite salad and enjoy!
