Ingredients
  • 1 large ripe and peeled banana
  • 1 large egg
  • cup cacao powder
  • ½ cup almond butter
  • 3 tablespoons honey
  • 1 tablespoon vanilla extract
  • ¼ teaspoon baking soda
  • pinch salt optional
  • ½ cup dark chocolate chips
Instructions
  1. Preheat the oven to 400°F.
  2. Place all ingredients (except chocolate chips) into the blender in the order listed and secure lid.
  3. Blend on Low to Medium for about 30 seconds with a power blender, a little longer with a regular blender.
  4. Stop when smooth and thick (do not overblend).
  5. Pour mixture into muffin cups, all placed on a baking tray, filling about ¾ full. Next, top off with a few chocolate chips.
  6. Bake for 10-12 minutes making sure to watch the muffins closely. Once done, remove from the oven and allow to set and cool for 15 minutes.
  7. Enjoy!

Recipe Notes

1. What’s great about these is that they actually taste better on the second or third day, so consider making these a day or two in advance!
2. These little delights will keep for the best part of 4 or 5 days.
