Summer Thyme Hummus

  • 1/2 cup grape seed oil
  • 1/2 to 1 cup lemon juice start with 1/2 cup and add more if desired
  • 1 teaspoon lemon zest
  • 8 to 12 small cloves fresh garlic
  • 3 tablespoons fresh thyme
  • 1 can garbanzo beans drained
  • 1 can white beans drained (if you don't have, use 2nd can garbanzo beans)
  • 1/2 to 1 teaspoon Celtic salt)
  • A few grinds of fresh black pepper
  • 1 teaspoon honey optional


  • Place all ingredients into the blender in the order listed and secure lid.
  • For Blendtec: Press the SAUCES button.
  • For Vitamix: Select VARIABLE, speed #1. Turn machine on and slowly increase speed to Variable 10, then to High. Blend for 1 minute until smooth. Add a little water if necessary to keep mixture flowing freely through blades.
