Instant Vegan Sorbet

Ingredients
  

  • 1 cup your favorite vegan milk substitute unsweetened
  • 1 pound frozen unsweetened fruit
  • 1/4 cup sweetener to taste or 4 to 5 dates*
  • 1/2 teaspoon vanilla extract
  • 3 to 4 cups ice if using fresh fruit

Instructions
 

  • Place all ingredients into the blender in the order listed and secure lid.
  • For Vitamix: VARIABLE, speed #1. Turn machine on and slowly increase speed to VARIABLE, speed #10, then to HIGH. Use the tamper to press ingredients into the blades. In about 30-60 seconds, the sound of the motor will change and four mounds should form. Stop machine. Do not over mix or melting will occur. Serve immediately.
  • For Blendtec: Press the ICE CREAM button.

Notes

*If using sweetened milk substitute- reduce additional sweetener (or omit) to taste.
If mixture has consistency of a milkshake, firm it up by slowly adding 1 cup of frozen ice cubes. Process until smooth. For recipe variation, other fruits may be substituted.
