Instructions
Make sure to chill your champagne or sparkling wine!
Simple Syrup:
In a saucepan, boil sugar and water over medium-high heat until sugar has dissolved. Remove from heat, cool to room temperature and transfer to a jar. Store in a cool pantry or refrigerate.
Easy Champagne Cocktail #1 How to Make Bellini:
To make the puree you can use fresh or frozen fruit, if it's frozen make sure it's thawed.
Puree fruit and simple syrup in your blender.
For 2 cups of fruit or bag of thawed frozen fruit, I use about 1/3 cup of simple syrup.
For smaller batches, I use 1 cup of fruit around 3+ tablespoons of simple syrup
Taste; add more simple syrup if desired.
Strain mixture through a fine mesh sieve.
Now if you make this ahead of time, cover it and store in the fridge for the next day.
Pour 2 tablespoons strained puree into your Champagne flutes.
Fill with chilled prosecco or sparkling wine.

* I make simple syrup with 1:1 filtered water and raw sugar, which will make a brown color simple syrup, but any sugar can be used
