Chili Chocolate Truffle

Ingredients
  

  • 8 large Medjool dates pitted
  • 1 tablespoon extra virgin coconut oil room temperature
  • 2 tablespoons dried shredded coconut unsweetened
  • 1 1/2 tablespoons cacao powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract or ground vanilla
  • 1/4 teaspoon ground cardamom
  • 1 pinch strong chili powder or more if you prefer
  • Coconut nuts, or cacao powder to finish (options below)

Instructions
 

  • Place all of the ingredients into your blender jar.
  • For BLENDTEC: Use the BATTERS cycle to blend for 23 seconds. Push the ingredients down into the blades and then run the BATTERS cycle a second time, until well-combined.
  • For Vitamix: Starting on Variable, Speed 1, increase the speed to 7 and blend for approximately 60 seconds or until well-combined, using the tamper to push the ingredients down into the blades.
  • Place the mixture in the fridge for about 10 minutes. Then form about a dozen truffle-sized balls; they should be half the size of a golf ball. Roll the truffles in cocoa powder, finely chopped almonds, goji berries, or pistachios, or shredded coconut if you like. Place in the fridge for at least 20 minutes before serving, and enjoy them for up to a week in the fridge!
