KEY LIME PIE GREEN SMOOTHIE RECIPE
Another delicious dessert like green smoothie recipe from LeAnne at Healthful Pursuit, this Key Lime Pie green smoothie will have your mouth watering and your body craving the cool taste and creamy texture – just like traditional key lime pie invokes!  Plus, this vegan dessert-like key lime pie green smoothie is under 300 calories and high in fiber and protein!  This tasty green smoothie is perfect for breakfast, as a snack, or post workout green smoothie.  Of course, you can use peanut butter if nuts are not an allergy issue in this yummy protein dessert smoothie made in a high powered blender.

Key Lime Pie Green Smoothie

Servings 20 oz/2.5 cups
Calories 293 kcal

Ingredients
  

  • 2 tablespoons key lime juice about 4 limes
  • 1 teaspoon key lime zest about 2 limes
  • 1 cup unsweetened milk substitute
  • 1 ripe frozen banana
  • 1/4 teaspoon alcohol-free vanilla extract
  • 2 drops liquid Stevia or 1 tablespoon ground xylitol or 1 pitted medjool date
  • 1 tablespoon sunflower butter nut free OR peanut butter
  • 2 cups organic baby spinach
  • 4 ice cubes
  • Gluten-free graham cracker pieces optional for garnish

Instructions
 

  • Add all ingredients accept for gluten-free graham crackers in the order listed to your jar
  • For Blendtec: Press the SMOOTHIE button
  • For Vitamix: Start on speed 1, turn machine on and slowly increase to speed 10, then flip to high. Blend until smooth, approximately 1 minute
  • Garnish with gluten-free graham crackers.

If whipped topping is used, recipe is no longer vegan. To maintain vegan-ness, try using vegan whipped cream instead.

HEALTH BENEFITS AND FUN FACTS ABOUT KEY LIME PIE
The origin of key lime pie has been traced back to the late 19th century in the Key West, Florida area.  The first formal mention of Key lime pie as a recipe may have been made by William Curry, a ship salvager and Key West’s first millionaire; his cook, “Aunt Sally”, made the pie for him. If such is the case, however, it is also possible and maybe even probable that Sally adapted the recipe already created by local sponge fishermen. Sponge fishermen spent many contiguous days on their boats, and stored their food on board, including nutritional basics such as canned milk (which would not spoil without refrigeration), limes and eggs. Sponge fishermen at sea would presumably not have access to an oven, and, similarly, the original recipe for Key lime pie did not call for cooking the mixture of lime, milk, and eggs.     We have a vitamix so instead of the butter I added toasted sunflowers. The stevia wasn’t even needed! This was delicious, thank you!

    Delicious! I ran out of spinach, so I used a bunch of romain lettuce and 1/2 of a small cucumber. I love how you can sub so many veggies in the Vitamix!

    I love, love, love this smoothie. Creamy, lime, tastes just like a pie and kinda like you are cheating on the smoothie challenge. My kids had NO idea there was spinach in it, I have to make more now. Hands down my family’s favorite
