EASY SWEET POTATO BROWNIE RECIPE

This recipe was the final result of a lot of tries, failures until finally I got the measurements right.

When I researched healthy brownie recipes, I found they were so complicated or really high in fake sugar, fats and calories.

Some recipes were clean but packed with calories.

This recipe is the perfect combination of a decadent flavor and that texture that brownies must have, and most importantly everything was added in healthy portions.

These brownies are excellent for family reunions, bbq’s and any other get together.

You and your kids will love them!!

Sweet Potato Brownies

Ingredients
  

  • 4 tablespoons almond milk
  • 1 1/2 teaspoons vanilla extract]
  • 1 egg
  • 1/4 cup/70 grams applesauce
  • 5/8 cup/150 grams cooked sweet potato skin removed and cooled
  • 4 tablespoons oat flour
  • 3 tablespoons cocoa
  • 2 teaspoon baking powder
  • 1 tablespoon almond butter
  • 4-5 envelopes stevia approx 2 teaspoons
  • 70 % dark chocolate chips optional

Instructions
 

  • Preheat the oven to 350°F.
  • Grease a baking pan or muffin pan (we use coconut oil)
  • Place all ingredients into the blender in the order listed and secure lid.
  • For Blendtec: Press the BATTERS/SAUCES button OR Medium to Medium-Low Speed for 30 seconds
  • For Vitamix: Select Variable Speed 1. Turn machine on and slowly increase to Speed 10/High. Blend for 45 seconds.
  • Pour the batter into pan/muffin tin.
  • Sprinkle with chocolate chips if desired.
  • Bake for 30 minutes.
  • Let cool for about two hours as they will come out easier and in better shape.

    Tasty and moist, but I can taste the sweet potato slightly, and they have a cake-like texture, not a brownie texture.
    Also, when I calculated the calories on MyFitnessPal, I got 68 cal/brownie (9 servings) (which jumped to 114 cal/brownie when I added a half cup of optional semi-sweet choc chips to the top). W/o the choc chips, the brownies are not very sweet.
    I baked them in an 8×8 pan, lined with parchment paper. I don’t think there’s any way to have spread them out into a 9×13 pan.

    1. Hi, Ann! So happy you were able to try the recipe! Feel free to substitute ingredients to fit your palate. The brownies are very tasty and you may taste a hint of the sweet potato, but rest assured it won’t over power the brownie. If you’re serving to friends they may not even notice. You can also scale back the chocolate chips is you’re looking to cut calories. An 8×8 pan is perfect for this serving. Glad you enjoyed them!     Questions:
    1. I don’t have almond butter. Can I use coconut oil, or real butter?
    2. Can I make them in the food processor instead of a Vitamix?
    3. What size pan do you bake them in?
    In the nutritional data, you said serving side is “1”. How big is each serving? Only 50 calories each?!

      1. Absolutely you can substitute the Almond Butter. However, for Almond Butter, you may want to use another nut butter similar in consistency. So a Cashew butter, tahini (sesame butter), or peanut butters are good substitute. Here is a list of nut butter substitutes you can review.

      2. You can absolutely use a food processor, instead of a Vitamix.

      3. A 9×13 inch pan should be fine for these brownies. Each pan should make 9 brownies. Each brownie is about 50 calories.

  3. What size pan is needed for this recipe? It’s not mentioned in the recipe, unless I missed it some how?

    Also, 5/8 cup would be 10 TB, correct?
