SILKY ALMOND COCONUT MILK RECIPE

This delicious smooth, silky almond coconut milk recipe is nutty and slightly sweet, with the perfect creamy consistency.

By looks alone, it can easily pass for dairy milk and you will think the taste is even better! 

Almond coconut milk is wonderful way to add heart healthy monounsaturated fats to your diet.

Plus it’s easy to make and versatile – being a quick alternative to store-bought non-dairy milks.

Almond milk is delicious alone, but the addition of coconut in this recipe is way more exciting! 

A high speed blender, like a Blendtec or Vitamix will quickly make the almond milk, however a 700 watt blender (such as a nutribullet) will also work!

Just make sure you have a nut milk bag or double layer cheesecloth to strain the almond pulp out.

Ingredients
  

  • 1 1/2 cups filtered water + ½ cup for soaking
  • 1/2 cup raw almonds
  • 1 1/2 cups hot filtered water
  • 1/2 cup unsweetened shredded coconut
  • Nut Milk Bag
  • Optional Flavor Additions to Taste
  • vanilla extract
  • stevia or dates
  • raw cacao
  • pumpkin pie spice

Instructions
 

  • Soak almonds overnight in ½ cup filtered water. Rinse almonds.
  • Add 1.5 cup hot (not boiling) water and 1/2 c unsweetened dry & shredded coconut to blender jar and let sit for 15 minutes or until cool.
  • Add soaked almonds plus 1.5 cups filtered water and secure lid.
  • For Blendtec: Press the WHOLE JUICE button OR Blend on a Medium to Medium-High speed for 50 seconds. Wait about 10 seconds and run through the same cycle 1 more time.
  • For Vitamix: Start on VARIABLE Speed 1. Turn machine on and slowly increase speed to VARIABLE Speed 10/HIGH for about 1.5 minutes.
  • Strain using a nut milk bag.
  • You can add a touch of vanilla and stevia or other flavor options if you like, but go easy because it tastes great without them!

  1. I just love this recipe, I used it in my Nesspresso coffee machine, made myself a latte, it was scrumptious.

  2. The instructions on here are a little confusing. It says to rinse the almonds, then to add 1.5 cups hot water and shredded coconut. It sounds like everything is supposed to go together, but in the following portion it says to put the coconut water mixture in first and later the almonds

      Hi Amber! Sorry it’s confusing! The original recipe did separate it but our recipe testers made it even faster by combining everything with the high powered blenders. Just add the almonds to the coconut/hot water mixture and blend. 🙂

    I have made this into a hot chocolate beverage! It’s so good. I bring the coconut flesh with almond milk to a slight boil, then I add a little bit of water and powdered raw cacao. At the end, I add a tablespoon of cinnamon and a pinch of nutmeg. It’s soooooo good; it satisfies my sweet tooth craving and it gives the nutrients my body craves. Try it!!!
